Chia Pudding with Açai & Berries
For breakfast on the go or a work lunch, this jar is a clean eating, raw food, nutrient packed option.
- 4 tbsp chia seeds
- 1 cup almond milk
- 1 teaspoon of honey
- 1/2 cup fresh mixed berries cut in pieces and macerated with one tbsp of honey
- 3 tbsp frozen açai
- 1 cup fresh strawberries
- 1 banana
- 1 tbsp almond butter
- ¼ cup almond milk
- 2 tsp bee pollen
- Add the chia seeds, almond milk, and honey to a jar, mix to combine and let it rest for 20 minutes. (For a thicker consistency, add more chia seeds and let it rest overnight in the fridge)
- Make the açai smoothie by mixing all ingredients in a blender.
- To assemble the jar, add half of the mixed berries, then a layer of chia pudding, then the acai smoothie and finish it with red berries to decorate.
