Chia Pudding with Açai & Berries

For breakfast on the go or a work lunch, this jar is a clean eating, raw food, nutrient packed option.

INGREDIENTS

Chia Pudding

  • 4 tbsp chia seeds
  • 1 cup almond milk
  • 1 teaspoon of honey

Fruit Layer

  • 1/2 cup fresh mixed berries cut in pieces and macerated with one tbsp of honey

Açai Smoothie

  • 3 tbsp frozen açai 
  • 1 cup fresh strawberries
  • 1 banana
  • 1 tbsp almond butter
  • ¼ cup almond milk
  • 2 tsp bee pollen

INSTRUCTIONS

  1. Add the chia seeds, almond milk, and honey to a jar, mix to combine and let it rest for 20 minutes. (For a thicker consistency, add more chia seeds and let it rest overnight in the fridge)
  2. Make the açai smoothie by mixing all ingredients in a blender.
  3. To assemble the jar, add half of the mixed berries, then a layer of chia pudding, then the acai smoothie and finish it with red berries to decorate.
