Chia Pudding with Açai & Berries
For breakfast on the go or a work lunch, this jar is a clean eating, raw food, nutrient packed option.
4 tbsp chia seeds
1 cup almond milk
1 teaspoon of honey
1/2 cup fresh mixed berries cut in pieces and macerated with one tbsp of honey
3 tbsp frozen açai
1 cup fresh strawberries
1 tbsp almond butter
¼ cup almond milk
2 tsp bee pollen
Add the chia seeds, almond milk, and honey to a jar, mix to combine and let it rest for 20 minutes. (For a thicker consistency, add more chia seeds and let it rest overnight in the fridge)
Make the açai smoothie by mixing all ingredients in a blender.
To assemble the jar, add half of the mixed berries, then a layer of chia pudding, then the acai smoothie and finish it with red berries to decorate.
